Southern California loves burritos so much that they even have one named after the state.

A California burrito typically is made with carne asada, French fries, cheese, salsa and guacamole all wrapped in a flour tortilla. But just as this regional classic has gone mainstream across the country, the burrito is taking on new flavors with a diverse selection of ingredients. As so often is the case, the new variations hitting restaurant menus are getting their start right in the same place that is dedicated to this regional classic.

NEW TWISTS ON A REGIONAL FAVORITE:

  • Lightening up the classic burrito. One trend-setting restaurant is offering burritos that would appeal to even the most health-conscious consumers featuring such selections as a vegetarian burrito with shitake machaca and a vegan breakfast burrito with tofu scramble and homemade Tempeh sausage.
  • Catch of the day. A number of regional restaurants are specializing in burritos featuring fish and seafood, including ones made with smoked fish and grilled tilapia.
  • Sushi burritos? Leave it to the creative minds of So-Cal chefs to combine two consumer favorites into one. Sushi burritos come wrapped with seaweed and rice and contain a variety of tempting fillings like tuna, crab meat, shrimp and more.
