Shrinking Menus: Growth Among Beverages

Why you shouldn’t underestimate the power of a good beverage program. 

 

In restaurants across the U.S., both non-alcoholic and adult beverages are seeing an uptick in sales. Much of this growth is a result of the consumer desire for greater beverage variety. In fact, 40% of consumers say full-service restaurants (FSRs) should offer greater drink variety and 34% say the same for limited-service restaurants (LSRs).  Heavily skewing these statistics are members of Generation Z, (Gen Z) who report 55% for better variety in FSRs and 44% in LSRs. Operators are looking to beverages for menu growth because consumers are more likely to stay longer in the restaurant and increase check averages.

Leading manufacturer and entegra supplier, Ventura Foods, says to look for increased customizable beverages, such as flavor shots for coffee, which allow for greater menu variety without having to order numerous additional inventory items. Also, keep an eye out for fast-casual and quick-serve operations to begin extending their adult beverage menus, so guests are more inclined to stay in the restaurant instead of grab-and-go.
