Wheat makes a comeback with a global palette!

Wheat is coming back in a big way, as the paleo and gluten-free trends wane. Traditional baking methods, high-quality ingredients, and breads with added health benefits are winning over hearts and stomachs alike. Consumer desire for transparency and better-for-you foods is leading comeback of high-piled pancakes, fresh breads with chewy crust and whole-wheat noodles. Atop the wheats to watch this year: is seitan, a protein made from cooked wheat gluten and referred to as the “meaty vegan staple.” Naan bread,

Seitan is an excellent “wheat meat” to feature for vegetarian and vegan customers. One idea is to serve a seitan stir-fry with soy sauce and sesame oil, fresh garlic, and crisp vegetables like snow peas and bell peppers.

Naan bread a traditional Indian flatbread, is also the “fastest-growing bread on menus,” according to new research from Datassential. This bread is incredibly versatile and easy to use in non-traditional ways. Try it as a base to make miniature pizzas. Other potential recipes include a breakfast hand-held dish with scrambled eggs and sausage crumbles, or a dessert pizza with cream cheese spread, cinnamon and fresh fruit.
